Some of my more environmentally conscious friends have given up almonds. I cannot. I won't eat peanut butter, which is not made with nuts but with legumes, legumes that all have a kind of fungus that is inflammatory. I adhere to an anti-inflammatory diet so not peanuts or peanut butter.
Almond, almond, that's my jam. Almond butter is the bomb.

I sometimes make my own from raw almonds. Jars of packaged nut butter are so easy. How's come G.L.Alfieri almond butter is so much tastier than mine? The jar says it is nothing but almonds. Mine is nothing but almonds but theirs is so much yummier.
G.L. Alfieri almond butter is not cheap. This is "I deserve a treat food".
I made almond butter protein cookies with chia seed and chocolate: food for the goddess. And I am the goddess. I am so slick. I make a gel with water and chia seeds to avoid using eggs so I get a gluten-free, dairy-free, sugar-free and vegan protein cookie. Next time, I'm making small protein bars. Yum. Num. Num. The recipe, from my friend Kelly, is for peanut butter chia seed cookies. And her recipe didn't add chocolate.
Everything goes better with chocolate, am I right?
My favorite professor in college was Professor John Alfieri. I bought Alfieri almond butter because when I saw the name on the jar on the shelf at Rainbow Foods, I felt a surge of love for Prof. Alfieri.
I've always been a sucker for little Italian men. Yum!
